Guacamole with Lemon and Shallots
I love super easy recipes and guacamole is one of my favorites. I probably eat an avocado at least once a day. Lately they've been super ripe and in season around San Diego, which makes me a very, very happy camper.
I do normally make traditional guacamole with red onion and limes, but turns out I didn't have any at the house this weekend. Instead of running out to the store, I decided to just use what I have on hand. It actually turned out just as good! I love shallots and to me, they're just as delicious as red onion. And the lemon juice with salt works perfectly to bring out the flavor of the avocado.
And I love that it's under five ingredients. The simpler the better for me. If I can make something and delicious and homemade in a dash, that's the best. We're all busy, but it doesn't mean we have to miss out good healthy food.

Simple Guacamole Recipe
- 1 ripe avocado
- 1 shallot, chopped
- 2 lemon wedges
- salt to taste
- Mash avocado in a bowl.
- Stir in chopped shallots.
- Squeeze the juice of one lemon wedge into mixture and add salt to taste.
- Add additional lemon juice and salt if needed.
There are so many ways I use guacamole: in brown rice bowls, on top of toast and of course, as a dip. I honestly can't get enough of it and will never get sick of it!
