Love this super easy guacamole recipe. And I like the idea of using lemon and shallots instead of lime and red onion. Love me some shallots! The simplest raw vegan dish for summer I can think of. Delish.

Guacamole with Lemon and Shallots

I love super easy recipes and guacamole is one of my favorites. I probably eat an avocado at least once a day. Lately they've been super ripe and in season around San Diego, which makes me a very, very happy camper. 

I do normally make traditional guacamole with red onion and limes, but turns out I didn't have any at the house this weekend. Instead of running out to the store, I decided to just use what I have on hand. It actually turned out just as good! I love shallots and to me, they're just as delicious as red onion. And the lemon juice with salt works perfectly to bring out the flavor of the avocado.

And I love that it's under five ingredients. The simpler the better for me. If I can make something and delicious and homemade in a dash, that's the best. We're all busy, but it doesn't mean we have to miss out good healthy food.

Simple Guacamole Recipe

Ingredients:

  • 1 ripe avocado
  • 1 shallot, chopped
  • 2 lemon wedges
  • salt to taste

Directions:

  1. Mash avocado in a bowl.
  2. Stir in chopped shallots.
  3. Squeeze the juice of one lemon wedge into mixture and add salt to taste. 
  4. Add additional lemon juice and salt if needed.

There are so many ways I use guacamole: in brown rice bowls, on top of toast and of course, as a dip. I honestly can't get enough of it and will never get sick of it!
